I am frequently asked about instructional Omaha at UNL here is the answer I send:
Unfortunately, University of Nebraska–Lincoln is no longer offering Omaha Language classes. The first book below contains much of the curriculum from those University of Nebraska–Lincoln classes and some of the Macy Public School's Omaha Language materials. I am unsure what curriculum NICC or Macy Public Schools currently use to teach Omaha Language. I have included the modern materials I know about. Feel free to contact me directly.
